Salmon and zucchini bundles: a tasty and light summer dish!

Quick and easy to prepare, yet so delicious! You will love them.INGREDIENTS
black olives
capers
2 zucchini
salmon
lemon juice
salt
olive oil, as needed
DIRECTIONS
Thinly slice the zucchini lengthwise and grill them for about 5 minutes per side. Once they have cooled, weave together 4 slices for each bundle. Fill each bundle with fresh salmon, capers, black olives and a bit of lemon juice. Close the bundles, pour some olive oil over them and bake for 20 minutes. Serve them cool with a splash of lemon juice over them.
