Burrito samosas: you'll never want to get Mexican takeout again after a taste of it

Ingredients:3 tbsp olive oil
1 red onion (finely chopped)
3 cloves garlic (minced)
1 chilli (finely chopped)
1 red pepper (diced)
1 tbsp smoked paprika
1 tbsp ground coriander
2 tsp cumin
2 tsp salt
2 tsp tabasco sauce
3 diced and cooked potatoes
1 tin black beans
1.5 cups cooked basmati rice
1 cup grated dairy free cheese
6 tortillas
1/2 cup almond milk
Method:
1 Heat the oil in a pan
2 Add the onions and cook them until they’re translucent
3 Add the garlic, chilli, red peppers and stir it till soften
5 Now add the spices and shortly fry them beforre adding potatoes.
7 After a few minutes ddd the black beans and stir them into the mix
8 It is now time to fill tortillas. Start with putting cooked basmati rice in the middle of a tortilla, then add cheese on top of it and finally add the potato mix
9 Cut out a triangle from one of the tortillas and put the triangle on top of the filling
10 Brush the edges of the tortilla with almond milk and fold the edges of the tortilla into the middle to form a samosa-shaped parcel
11 Put burritos on to a baking tray (lined with parchment paper) FOLD SIDE DOWN – and bake at 200 C for 15 minutes
12 Serve immediately with home made guacamole!
