Creamy, delicious apple pie: cinnamon makes everything perfect

Ingredients:
Ingredients for shortcrust pastry:
250g all-purpose flour
125g sugar
135g cold butter
1 egg
pinch of salt
Lemon peel
Ingredients for custard:
500ml milk
4 egg yolks
120g sugar
40g cornstarch
1 teaspoon vanilla extract
To decorate:
2 apples (about 300g)
1 tbsp brown sugar
cinnamon to taste
Ingredients for shortcrust pastry:

1 tbsp brown sugar

Shortcrust pastry: in a bowl, put the flour, salt and butter and crush. Add the sugar, the egg and vanilla extract and stir until smooth, then refrigerate for 1 hour.
Filling: mix the egg yolks with the sugar and stir, then add the vanilla extract and cornstarch, then add two tablespoons of milk. Put the rest of the milk in a saucepan and add the lemon peel. let it boil and add the mixture with the eggs, stir until mixture is smooth and without lumps. Allow to cool covered with plastic film.
Roll out the pastry on a baking pan and make holes in the bottom, pour the cream and cover with slices of apples. Sprinkle brown sugar and cinnamon.
Bake at 180°C (360°F) for 40-45 minutes.
