Fried cream-filled cannoli: the recipe to make them at home

Ingredients:
Dough:
500g flour 00
50g sugar
50g lard
250ml milk
1 egg
1 pinch salt
1 packet of brewer's yeast
Milk cream:
1 liter milk
100g wheat starch
200g sugar
200ml cold whipping cream
Directions:
Dissolve the lard and in a bowl mix flour, sugar and yeast dissolved in the milk. Start mixing and add the salt and egg, then gradually milk and lard. Knead until smooth. Let rise for two hours and then shape balls of about 70g. Roll out and roll the strips around the cones. Cover, let rise for 1 hour and 30 minutes and deep fry in hot oil.
Cream: mix the milk with sugar and starch and bring to a boil in a saucepan. Then pour on the whipped cream and stir. Fill the pastry bag and fill the cannoli, then coat them with sugar and serve.
