Cheese Stuffed Onion Meatballs

Ingredients:
350g Ground Beef
1 Diced Onion
Parsley
30g Parmesan Cheese
1 Egg
Salt and pepper.
2 Red Onions
100g Grated Mozzarella Cheese
50g Flour
2 Beaten Eggs
35g Bread Crumbs
Instructions:
Add beef, chopped onion, chopped parsley, parmesan cheese, egg, salt and pepper and mix well
Top and tail the red onions
Then Slice Red onion from the centre to one side and peel away the onion leaves ensuring to keep them whole, we need four for this recipe. Be sure to save the remainder for an another recipe.
Make 8 small patties from the meat mix using approximately 1 teaspoon
Circle the onion leaves around four of the patties
Fill the onion with mozzarella cheese
Then place a second pattie on top
Then wrap the stuffed onions in the left over ground beef mix
Dip the balls first in the flour, then the egg and finally into the bread crumbs
Deep fry in hot oil at 170°C 325°F for 7-8 minutes
