Souffle pancakes with mint: how to prepare them quickly

Ingredients:
1 yolk
20 gr milk
Mint extract
20g flour
1/2 tablespoon of baking powder
Food color (green)

Directions:
Divide the yolk and the egg white (put the egg white in the fridge) and start to whisk it with milk, mint extract, flour and baking powder. Finally add the colorant.
Then whip the egg white with the sugar, add the two compounds and cook the pancakes in a non-stick pan.
