Seafood pasta salad: a refined summer dish

Serves 4
Ingredients:
350 g of pasta
2-3 cloves of garlic
100g cherry tomatoes
10 basil leaves
10 mint leaves
65g black olives, pitted
half a pepper
a stalk and a half of celery
a little parsley
350g fish to choose between salmon, tuna, swordfish (or a mix of the three)
10 medium shrimp (or a few more if small)
350g squid
700g mussels
apple vinegar
White wine
extra virgin olive oil
salt
pepper

Directions:
Prepare the mussels and the calamari separately: put the first ones on the fire and season with wine, parsley, salt (even with a little pepper if you like) until they have shelled; as for the squid, place them in a pan and fry the garlic, add a little wine and cook for 3-4 minutes; don't waste the cooking liquid of the squid, which we will use later for cooking pasta (along with the cooking liquid of mussels and prawns).
Clean the shrimp and cook them in the pan always after browning the garlic; add wine and wait for the shrimp tails to curl: now they are ready;

Meanwhile, cook the fish on the grill, cut the vegetables and cook for 5 minutes in apple vinegar; then drain and let them cool at room temperature;
prepare another broth with the shrimp heads: put it in a pan with 1 liter and a half of water, salt and cook for 15 minutes; add this broth to the other 3 previously prepared and cook the pasta; drain it, add ice cubes and fish and your dish is ready.
