Apple caramel cheesecake: a cool cake to enjoy on summer nights

Ingredients:
Cookies 200g
Butter 90g
Mascarpone 500g
Eggs 3
Sugar 180g
flour 2 tablespoons
Yogurt 1 whole jar
Grated Lemon Zest 1
Cinnamon 1 pinch
Amaretto Di Saronno 2 tbsp
Vanilla essence 1tsp
For topping:
Apples 3
Juice Of 1 Lemon
Sugar 2 tablespoons
Cinnamon 1 pinch
1 Handful Of Coarsely Chopped Almonds
Cookies 200g
Butter 90g
Mascarpone 500g

For topping:
Apples 3
Juice Of 1 Lemon
Sugar 2 tablespoons
Cinnamon 1 pinch
1 Handful Of Coarsely Chopped Almonds
Directions:
Chop the biscuits in the blender, then mix them with the melted butter. Pour the mixture on the bottom of the mold covered with parchment paper and compact by leveling with a spoon. Bake at 170°C (340°F) for about 12-15 minutes, so that the cookie crust is compact. Then the oven and allow to cool. Prepare the cream: in a bowl, whisk the mascarpone with the sugar, then add the eggs, the yogurt, the liqueur, the cinnamon, the grated rind of the lemon zest, the vanilla essence, a pinch of cinnamon and a pinch of salt. Finally add the flour and mix, then pour into the pan with cookie crust.
Cook in a static oven at 250°C (500°F) for the first 10 minutes, then lower the temperature to 90°C (180°F) and cook for another 40 minutes. Remove from the oven and allow to cool completely. Cut the apples into slices, put them in a pan with lemon juice, sugar and a pinch of cinnamon and cook for 5 minutes over medium-low heat. Remove from heat and allow to cool completely. Put the apple slices over the now cold cheesecake and decorate the cake with the caramel.
