Essentially, cake pops are miniature cakes that are rolled into small balls, covered with a yummy coating, and served on a stick. These rainbow cake pops are colorful and sugary, and very Instagram-worthy.

To make these rainbow Pops, you need only 3 ingredients: colorful muffins, melted chocolate, and sprinkles. It couldn’t be easier to make them too! You can use this recipe with a boxed cake mix. Simply follow the package instructions, bake the cake, cool, and crumble. You can also make your own cake, and use different food colorings to make colors of the bible!

You can make these ahead of time. It’s best to assemble and dip them right before serving.

You can make the cake pops on a stick (popsicles). To do this, create a ball, and ad the stick into the ball before dipping it in glaze and sprinkles.

Leave the sticks and ice cream cones, and serve these as cake pop truffles! Experiment with other cake mixes (like chocolate and vanilla).

Be careful when dipping the cake pops into the melted chocolate. They can easily become too heavy and the cake pop will fall off the stick. Rather use a spoon to drizzle the chocolate over the cake pop.

Drizzle melted dark chocolate over the white chocolate instead of adding rainbow sprinkles.

As an alternative to glazing, use caramel.

Use vanilla cake mix and crumb chocolate sandwich cookies into the cake mixture.

How to store Rainbow Cake Pops

If you use fresh cake, the cake pops will keep for a week. If you keep them for a longer time, mold might develop. The older the cake, the shorter the time you can store it for.

The cake pops balls can be frozen. To serve, allow to thaw in the fridge. Then glaze and serve. You can also add the sticks before freezing if you’re serving them in this way. Store in an airtight container. They will keep up to 3 months in the freezer.

melted white chocolate

How to make Rainbow Cake Pops

Crumble all muffins in separate bowls.

Add 1-2 tbsp melted chocolate into each bowl. Mix until combined.

Place a sheet of plastic wrap on your cooking surface and stack small disks of each color of muffins in the order of the rainbow.

Wrap the plastic wrap and shape it into a ball.

Freeze for 20 minutes.

Dip the lollipop sticks into the melted white chocolate and insert one into each cake pop.

Dip the cake pops into the melted chocolate, and add some colorful sprinkles. Chill for 15-20 minutes.

Notes

The cake pops will be easier to dip into the melted chocolate if you freeze them 10 minutes beforehand.
