Apple and Cheddar Cheese Souffles: perfect for appetizer or dessert

Ingredients:
For the apples:
1 tbsp butter
1 apple, cubed
1 tbsp sugar
1 tbsp butter

1 tbsp sugar
For the batter:
2 tbsp flour
2 tbsp butter
1 cup milk
1/2 tsp salt
pinch freshly ground black pepper
pinch cayenne
pinch nutmeg
3 oz sharp white cheddar, or almost 1 cup grated
2 eggs, separated
Directions:
Cut the apple and cook it with butter and sugar.
In a pan cook for 2-3 minutes butter and flour, then pour the milk and mix. When you have a cream let it cool. Add salt, black pepper and others spices. Then add egg yolk and cheese, mix well. Whisk the whites and add into the mixture. Finally add apple. Bake at 400° F (200°) for about 22 minutes.
