Fried lentil balls: easy to make but full of flavor!

Lentil balls can be either baked or fried. This quick and easy recipe might be just what you need to get kids to eat more legumes.
INGREDIENTS
200g lentils
1 potato
60g Parmesan cheese
salt
pepper
onion
parsley

eggs, beaten
breadcrumbs
breadcrumbs
DIRECTIONS
1. Blend together the cooked lentils with a potato. Mix in the Parmesan cheese and seasonings.
2. If the mixture seems too soft, add breadcrumbs. Make some balls using the mixture.
3. Dip them into the egg wash, and cover in breadcrumbs.
4. Deep fry for about 5 minutes, or until golden.
